what is the difference between a 259K and a 59? I've searched but can't seem to find out what is.

There is a 59K and a 59G and the difference is the inside layout. Basically the K has twin beds and the G has a double bed. There is also a Lithium version of each, i.e. 59KL and 59GL. You will be able to see the layouts on the Winnebago site.

No difference between 256K and 56K. 256 is the length in inches.
