I guess nothing is impossible. There is a guy on Sprinter-Source.com documenting a DIY build with a Sprinter van that sleeps 9 people, four adults and 5 kids.

Old thread on Sprinter-Source with some ideas for you.

The Westfailia plan is a loved tried and true starting point that works incredibly well in real life. Sportsmobile and others have further enhanced the plan in larger vans and almost any new van is larger than the 15’ 6” of most VW’s.

Default Have Roadtrek with rear slide out

It’s SS Ideal model, there are a few around, only made for two or three years.
We like ours on short chassis, makes for easier city parking, handles better.
Yes, rear doors are open to weather but it’s hard shell and top so no rain enters, rear doors dry quickly, that hasn’t been a problem.. Yes, as someone else suggested the push out uses up space on each side and above the push out as well.

Yes, rear window is special for emergency exit. Don’t forget children seem to grow quickly, needing more space / comfort.
Resale desirability should also be considered.
