Default Remodel Campervan / Race Van

I have a 1990 Ford E250 Coachman I use to tow my Datsun 1200 to vintage races and Formula 500 to autocross.

We've had it 11 years and I wish to reconfigure to make it work better for me. I want to move the tub forward over the wheel well and then move the toilet (which is centered in front of the rear doors) over to where the tub was so I can free up that area to have a work space.

I live in the desert and want to finally add coach A/C; roof A/C is a no go as at one of the tracks I go to the van just fits through the entrance exit tunnel. If you vehicle doesn't fit in the tunnel you have to wait until the end of the day to leave. My thought was to add one of those portable A/C units and vent the hose out the roof or the side of the van.

Lastly it has no generator; there is a hole for the Onan but those seem finicky. I've seen people mount portable generators inside vans but that doesn't seem ideal either. So is having to plug in to a portable generator outside the van that big of a deal?

Any thoughts or opinions would be appreciated.
