the sink itself?

I'd expect a "bar sized" stainless sink would do it

size it for the opening and the depth for the space below for the drain plumbing.

is you faucet mounted through the counter top or through the sink surround?

I'll be the replacement won't be. But seriously, It would be easier if you thought in terms of a counter top separate from the sink. You'll have more options and I would think it would be a lot cheaper. If your determined to stay with a one piece, start searching for companies that make cultured marble items like vanities or showers.

We are building our van with a stainless steel countertop with the integral sink to save weight. ARV is building it and they have built another van already with it and you can see it in this video right at the very beginning and later describes it:

Ditto.

Formica counter top can be cut and finish in many places. There are many choices for sink from Home Depot house style to marine/RV with glass lid. https://pantherrvproducts.com/sinks-faucets/

I have HDPE countertop (same material is used for cutting boards), it was CNCed, easy to clean, looks good, reasonable for wear, but it is sensitive to heat.

cut a hole and stick in a sink?

my pleasure way has separate sink from the countertop so more conventional.

a separate sink opens up your options.

while we do have a cover for the sink, the pleasureway has counter area, so the sink is left uncovered and while driving is a repository for stuff we don't want falling

Our 2004 RT 190 Popular counter top is warped. I have seen several like this from that general vintage. Roadtrek told me that the counter top/sink is structurally part of the larger cabinet system no practical to remove and replace, For what that might be worth.
