Actually, my understanding is that Sprinter DEF tanks DO have level sensors. I think they are something like 5 of them at fixed intervals (capacitive sensors most likely). Between measured values, the ECU interpolates based on miles driven. The Star system can display the level. It is only the display on the console that is missing on older Sprinters. New ones have such displays.
Oddly, my MY2014 has a menu item that shows a "miles to empty" for DEF. I have never heard of another Sprinter with this style of display. Sadly, it is absurdly inaccurate--I think it adds a constant 20,000 miles to the actual value. I've been meaning to try to correct it with my clone Star system.
