Welcome to the Forums
I don't have your model, the below is very general, you will have to locate where Roadtrek hid the electrical components in your van
there is a ac/dc "converter" to provide dc power ( and charge battery) when you are on shore power.*
the converter may be under a cabinet, under a bed or sofa- they are usually tucked out of the way
1.) check that AC power is getting to the converter
a.) check circuit is "live" by plugging a lamp into it, if power is coming from your house, check the breaker
b.) check ac circuit breakers in your van ( they will look much same as the breakers in a house panel
c.) if the ac is getting to the van you should have working 120 volt outlets and microwave
2.) check the roadtrek power panel ( not the vehicle fuse panel), you may also have 12 volt DC circuit breakers check these.
3.) the converter itself may have fuses, check these ( often at the output cables/connections )
* an "inverter" takes 12 volt DC power from your battery and turns it into 120 volt AC power
