Simple recipe for corn chowder
My family loves corn chowder, so I have a really simple recipe that works well in a camper. Though I list canned potatoes, it actually tastes a bit better with cubed potatoes you've boiled in advance.
You need:
1 can whole kernal corn
1 can cream style corn
1 can sliced or diced potatoes
1 can evaporated milk
salt pork
onion
salt and pepper to taste (I never add salt... you should get plenty from the salt pork)
Slice the salt pork into thin slices and fry until crispy done. Set aside.
Drain some of the fat off and fry onion slices until they are caramelized. For me, this is when 25-50% are about black. To reduce the salty flavor, don't fry them in the salt pork fat, but in margerine or butter.
In a pot big enough to hold everything, combine all canned ingredients and stir in the onions and salt pork, which should be broken into small pieces. Heat over very low heat, or in double boiler, until hot, then serve.
You can make this small by using small cans of everything,and as large as you want by adding more cans. Just try to keep the proportions the same.
Don't worry about left overs...it is actually better the next day!
