Default Pork cracklin anyone?

Last trip out we saw a place on I-10 called Don's Specialty Meats. It's on a frontage road on I-10
in Scott, Louisiana. There were signs approaching it, advertising cracklins and boudin.
Needless to say, I had to stop to try real crackling. I've only ever had cheap imitation pork rinds.
I was rewarded with some of the most unhealthy, but incredibly tasty, snack food I've ever had.
It was cajun spiced, crispy, and delicious. I wish I'd bought about 5 more lbs.
I would recommend it to anyone craving a salty-spicy hit of artery clogging fried food.
You can watch them making it, while they serve the fresh stuff non-stop.
I can't recall exactly, but I believe it was around $10/1lb. bag.
Worth every penny.

UPDATE: It's up to $12/1lb. bag. We got some there back in early November on our way west
from the aborted shuttle launch on the 1st of the month. It's still delish, though.

They can be good and you can't eat healthy all the time. I have one for you to try though and that is to get slab bacon with the skin on. Cut off the skin then slice the bacon and fry it. Now, put the skin on the grease fron the bacon fat side down. You may have to hold it as it wants to curl up. After trying it a few times you will see how long you want to fry it but don't let it get crispy. You will need good teeth to chew it but the flavor is out of this world. If you fry longer it will be easier to chew but less flavor and vice versa.

I barely get to try the cracklin', let alone a pork delight like the one you describe.
If I'm ever a single person again, I'll give it a try.
