Easy candy recipe to make in the RV (but very dangerous)
Chop 2 large dark chocolate bars into small pieces. Higher quality chocolate is best (such as Giardelli or Xocoatl) Melt in microwave or over a pan of hot water, stirring frequently just until melted. Add 1/2 cup chopped smokehouse almonds. Pour into 8X8 pan that has been lined with wax paper (or you can pour onto a plate that has been lined with wax paper) Top with another handful of the chopped smoked almonds and sprinkle with about 1/8 teaspoon of coarse sea salt. Chill until firm then break into bite size pieces. The combination of the chocolate and the salt is irresistable.
Another variety is to use the same chocolate, but add 1/2 cup toasted slivered almonds and about 1/3 cup of dried cherries. Sprinkle a few of the dry cherries on top - skip the salt.
This recipe is dangerous because it's way too good, you'll eat the whole batch then go back and make another one because it's so quick and easy.
