Cream cheese, sour cream, curry, chutney dip
I really enjoy this easy to make dip.
From memory.
The base:
1 cup cream cheese
1 cup sour cream
one third of a jar of Mango Chutney
1 tsp. curry powder (I use a madras curry paste). Use more or less curry based on your preference.
Now you can get creative:
one third of a cup of finely chopped green onions
one cup of small peeled shrimp
Blend the base together. I usually use a food processor but I used a hand held blender the last time to see if I could prepare it on the road and it worked fine. Then stir in your other ingredients.
Then just enjoy it. I really like it.
I didn't have shrimp or green onion on hand the last time I made it. I added some of that imitation crab instead and thought it turned out great. You might use more sour cream if you are using "drier" ingredients than the peeled shrimp because I found that it turned out thicker than usually using the imitation crab which doesn't add any liquid to the mix.
If you try this using "lite" or low-fat sour cream and cream cheese let me know how it turns out.
